How do you know? I worked at a restaurant where I worked till closing on Friday (10 pm) and by the time I got done with all the clean-up I wouldn't leave until 11-1130ish. The restaurant opened at 6 AM the following morning but I didn't come in until 800 AM. You don't need as many people right at opening, especially if the opening is in the very early hours of the morning.

And if you're on a salary, then that's why. For hourly employees, which I would imagine SkyClub employees are - it's different. They have set shifts. There are pros and cons to being salaried versus hourly.
I can understand your frustration, and I have mixed feelings on the issue about the club closing while flights are still waiting to depart. As a customer I would find it disappointing to have to leave, but having been on the other side of the fence as the employee, I can also sympathize with the SC employees and understand them wanting to be done and wanting to get home at the end of their shift. Not everyone lives to work...
