FWIW, June "winter" in Sidney is essentially the same as June "summer" in Seattle. In other words, temp should be in the 60-70 range. As for organized tours, look at Boutique Tours; last week we did their Hunter Valley Wine tour & thought it was very good. Also, as a cheaper alternative to the Blue Mtns, you could go by rail to Katoomba, then do the hop-on, hop-off bus. although you probably won't get much of a guided narrative.
