If you're looking to make a booking immediately, you can always call BA. Tell them your account shows the spend being hit and you want to make a booking. They should be able to either flick the switch to show it in your account or perhaps even do the booking by phone and not charge you the fee.
Worth a shot if you're worried about availability disappearing.
I think my voucher took about 4 days to post after hitting the spend.
Thanks for the advice! Gave them a call and they said they hadn't been notified by Amex yet so gave Amex a call and they said it takes up to 3 working days and that I should have it by Wednesday at the latest. Just got to hope the availability doesn't change too much until then!
