Just to clarify something. You're saving 20,000 points total for your stay, not 20K/night. 1 night Cat 8 is 40K; 1 night Cat 8 point saver is 35K.

St. Ermin's is a good location, you've got the points saver locked, you get brekkie daily. Unless you think you'd be spending time in the lounge for tea or evening cocktails/munchies, don't worry about your choice. Just go & have fun (and do a trip report after your stay!).

I know people who do go out of their way to get back to some of the nicer properties for high tea or evening cocktails/munchies. Some do it because they want to truly enjoy all the hotel has to offer; some do it to save $$ on food/drink because of GBP exchange rate.

I rarely get to lounge or restaurant for brekkie, but do tend to use a lounge more in the eve, either after a day of work or a day of sightseeing. Would I come back from either early just for lounge? No. Do I enjoy a glass of wine or two & some light munchies while unwinding/reading/before going out for eve or back to room to work? Yes.

Lounge/no lounge/morning/evening to me is a matter of personal preference. Just like stays at JWGH, CH, GS, PL, StP or the new Autograph's are personal preferences. None are bad, and it's nice to have options.
