There is a way to do this, in most hotels. It requires a competent and cooperative front-desk agent.
Book the rooms in the two people's names, with their own MR numbers. That way, they each get nights credit.
Shortly prior to checkout, ask the front desk to transfer $X from one room folio to the other. The fact that $X is the full amount of the other folio is purely coincidental. They shouldn't let you go over that, but they might.
When you check out, you get credit for the full amount of your folio, including the $X transferred in.
