There's no actual issue with the visa/length of stay situation but I'm not sure how best to prove this to the agent at the airport.

I know that one-ways can raise concern at check-ins (with visas, etc.) and I'm trying to figure out the easiest/cheapest way to address this.
Assuming you are a US citizen, then there ARE visa issues here, and what you want to do is not allowed.

You can enter Schengen without a visa for only 90 days. Given your intended length of stay, you will require a visa.

By the way, obtaining the correct visa is also, far and away, the easiest/cheapest way to address this.

US citizens entering the Netherlands (for example) must hold a return ticket:

Also, you can only be in Schengen for 90 days in any 180 day period so popping out of Schengen and coming back won't help.

If you want to stay longer, you must also (in some countries, procedure varies) register within days of arrival.

However, as you apparently intend to move around, this is also not the appropriate procedure for your case.

If you are discovered as having broken the terms and overstayed (even if this is when you are finally leaving for home) there can be consequences.

You would be advised to obtain the correct visa rather than attempting to breach the terms attached to your visa-free entry to Schengen.
