That difference is what makes Jiro a worthwhile restaurant to try at least once during one's travels or residency in Tokyo.
Does your Hero Jiro marinate his fish in vinegar? No? Mostly raw, some cooked? Yes? Does your sushi come in a lacquered box with some salted or preserved fish on top? No? Then he isn't perfecting any historical or traditional preparation of edomae, he's serving raw fish just like anybody else.
