Saba is regular mackerel, which is also common and the most basic and cheapest of fish. Sanma are pretty cheap too. Sell for under 100 yen each in the supermarket.
Another autumn seasonal fish is katsuo but September might be a bit early.
Salmon is an American sushi fish because it's cheap (because it is farmed) and abundant. I don't like the pacific salmon types too much.
Salmon does appear on most of the chain restaurant sushi menus. You should hopefully not be eating at 30 man a head at Jiro Roppongi. If he serves it then it's a total scam.
The frozen honmaguro is not the premium stuff. That's what winds up in supermarkets and kaiten sushi joints. The premium tuna that you eat at the fancy restaurants is (or should be) wild caught pacific honmaguro (bluefin) tuna -- no matter how much Bocastephen insists.

I guess the name "mackeral pike" threw me off. The common names for various fish can get confusing. In any event - I'll eat whatever the chef puts in front of me
