Day 8 - Red Bridge Cooking Class - Hoi An - part 3
The prep for the banana flower salad started with making the dressing, cutting the veg and grilling the chicken.
When then assembled the ingredients for the beef & noodle soup and sat down to enjoy this lovely fresh flavour delight.
The salad, dressing and chicken where then mixed together and we sat down to this dish accompanied by barbecued rice paper wrappers.
We moved over to the main restaurant to finish the meal with the fish in claypot dish with rice noodles and some fresh fruit for dessert.
The chef was very entertaining and funny and we had a great time preparing our lunch at the cooking school that was situated beside the river. The meals were all a delight to eat and extremely tasty. Vietnamese cuisine consists of lots of fresh herbs and vegetables and the Vietnamese shop twice a day, once for lunch and again for dinner so that it is all cooked fresh.
After a fabulous morning cooking and eating it was back to the hotel for a bit of a cool down before venturing back into Hoi An old town for some retail therapy and a few more beers maybe.
We sat by the river drinking beer whilst sitting on small plastic chairs, listening to karaoke from across the river. There were many ferries leaving from the riverside that had a couple of dozen scooters and their owners piled on them that headed off upriver. Clumps of floating lily were floating past us and small bats were flying around us adding to the atmosphere.
After a beer we decided to wander around some more shops and stopped for some iced coffee and cake before walking back to the hotel and an early night.
