Domestic fares get sent to distribution systems on this schedule (i.e. 10a, 1p, 4p, 8p ET). International fares are hourly. Those fares show up in your favorite shopping location ~45-75 minutes later.

Most airlines run some sort of Revenue Management optimization overnight, which may change inventory levels (and corresponding price points) in the early morning.
