Why will you need a chip and pin? I've never needed one, most places will swipe your card.

One of the main uses of chip and pin are at self serve gas stations. Also RR station automated ticket machines. That's about it. Unless you need gasoline at 3AM, you really don't need a chip & pin.

Correct, Amex is hard to use in Europe. Amex is scorned upon in France, they practically whip you with their eyes if presented. In Italy it's a bit better, but still, Visa or MC are the way to go.

I heard that Chase British Airways Visa has a c & p, miles usable with AA. Be careful, there are also "chip and sign" cards with a transponder inside, these are the ones you wave over the machine. Highly subject to fraud, and not used in Europe! Caveat emptor.
