I thought the OP was talking about possibly doing JFK-CDG-IST or JFK-AMS-IST, not JFK-CDG-AMS-IST, so no intra-EU flight with the middle seat empty business class.
I got to fly one of the old BE 767s SLC-HNL back in November, it wasn't horrendous. The cabin seemed rather old and empty, with all that space between the seats with nothing else. The new cradle seat (which I had CDG-SLC last Thursday) on the 763 was definitely cozy. I didn't use the AVOD for anything else than the map - I had my iPad for entertainment.
And, you don't have to do the funny shuttle bus stuff at CDG anymore. I was just through there a week ago. All of 2E and 2F are now connected by either walking or taking the train (like ATL) that arrives at least once a minute (I thought it was faster). And, the new AF lounge in the M pier of 2E is nothing to sneeze at!!!
