Is it just a stopover to let passengers off / on? If it is you must remain onboard. The staff do a brief baggage check before letting new passengers on. In J you get complimentary drink (non alcoholic due to local laws) before take off as per J.
For a longer stopover I'm not sure there is much to do really. You are welcome to hang around the airport (it's tiny and not very exciting) or you can leave on a transit visa (depending on your passport I believe). You could travel to Male day time but I've heard it's not great. I'm not really sure what the plan would be? Maybe go to a nice hotel for lunch? Though when I visited the Maldives trips by boat were very expensive and it may actually work out cheaper to go direct to CMB. (I know the tickets I purchased last night to CMB were only £18 more expensive to avoid MLE - though I know this varies).
