Do you suggest the same solution for infants, which trigger the same loophole?

There have been semi-joking posts here about starting a business in an airport renting / loaning a dog or cat to passengers standing in line for a small fee, then sending the dog/cat back out to do it again. An enterprising child under 12 years old could also make good money doing this by buying a refundable ticket and spending the day in the airport going in/out of the sterile area, as "accompanying" an adult gets you a free pass from the NoS.

But seriously, if you want a non-opt-out-pass from the NoS that doesn't require caring for a pet or a child, go to CVS and invest in an arm sling. If you can't hold your arms above your shoulders, you can't go through the NoS. Passengers with legitimate arm/shoulder problems report mixed success at avoiding the full grope with this involuntary opt-out.
You are probably correct about the arm sling. I have pain when lifting my arms up in the "TSA Surrender Postion" (TSP) so I only held my arms at shoulder level last trip thorugh a TSA Strip Search Machine. Clerk told me higher and I said that was as high as they went. Scan commenced in that position.
