I can't compare with recent experiences on these routes but you ask a good question. For me cost cutting on food makes no sense. Virtually nobody would chose airline x over airline y over an additional 5 euros on the ticket price which could be spend on food quality. Yes price matters, especially in economy, but 5 euros makes no difference IMHO.
Not knowing the numbers, but let's say an airline as LH is transporting 20 million passenger per year on long haul routes, means 5 euro per meal sum up to 100 million euros. That's a fair amount of money, which of course makes a difference when an airline is actually losing money IMHO.
