Fair enough, but if you're considering places like Gora Kadan and kayotei as well as Hiiragiya, I'm pretty sure you won't have any problems. The English level there is excellent. Personally -- and this is just me -- I trust myself and my communication with the hotel more than having a travel agent intermediate.
