Seems like you have a good plan for the flights. The only thing I would suggest is getting a hotel in Kowloon or Central if you aren't leaving HK until Sunday. There is literally nothing around the airport to do.
The airport express is super easy to use so getting there only takes about 25 minutes. Also, on your flight to DPS you'll be able to check your bags at either Kowloon or HK station so it makes it really nice.
Never been to HK, so can you elobrate on the check my baggage at Kowloon or HK station? Meaning leave them at the airport overnight and just take my carry on with me for the overnight stay at the hotel?
