Yeah, I agree it's possible, especially on the train, but if you don't want to deal with security hassles, consider just killing that time with a few brews in the airport. They've majorly upgraded their dining/drinking options since 2011. There's now a Vino Volo/Ale House near Terminal D, where you can get wine flights and microbrews. There's also a Squatters Brewery (local microbrew), Gordon Biersch Brewery, and a High West Distillery (High West makes whiskey & vodka in nearby Park City). And there are several airport versions of good local restaurants, such as Market Street Seafood, Salt Lake Pizza & Pasta, and Vivace.
