It interesting to know that SQ took the “risk” to serve Yusheng – sounds to me like they are making an effort to break out of the mole that “it is just a tray meal”! BTW, Yusheng is usually served with raw fish and traditionally mackerel instead of salmon in smoked form.

SAUCflyer. I shall definitely keep keep learning something new. Only one occasion, TG beat SQ - FA kept topping up my plastic glass with Courvoisier in Y after the meal
It is also interesting that you mentioned about Yusheng. It is good to know SQ challenged to serve this dish in local style rather than commonly (outside of local) recognized style.
For similar reason, my next mission (?) is to try Hanakoireki in C and Kyo Kaiseki in F/R for fun.
