I assume in ET the offering is the same as that in WT... Generally when we offer a sandwich there is not officially a choice, but we will usually carry some veg options, normally cheese and pickle or something similar. They are really there as an "emergency" and would not be offered by the crew unless someone really has a dislike or allergy to the primary option, or has forgotten to order a veg meal.

You are right that that used to be the case but now in ET we do offer a choice but one choice will always run out before the other, although it varies from route to route which one runs out first. On this flight it looks like the cabin crew were managing the situation in order that people like the OP were able to have the veg option.
