I'm staying not far from Ueno Station in Tokyo.
I would take the Keisei Access Express for about 1250 jpy to Keisei Ueno. The morning Access Expresses go to Haneda airport, so you will need to change at Aoto to a train that goes to Keisei Ueno.

From what I gather, there is no way at this point for me to get an advance-price discount on the Shinkansen. Is this correct?
Walk-up. As far as I know there's no early bird discount. A one-way ticket on Nozomi will be about 13520 jpy.

The easy way to go from Kyoto Station to KIX is on the Haruka or airport bus for about 2500 jpy.
Or you can take the JR West or Nankai rapid airport trains. The trains depart from Osaka and Namba respectively. It will cost about 1800 jpy including the fare from Kyoto to Osaka.
