Heck, the last two dinner flights I took ATL-TUS didn't even have a hot option.
I would assume that TUS is not a catering station so the early morning flight is catered out of ATL, since we are not getting to the warm part of the year, evening using dry ice, that would melt sitting inside the plane over night. This could be one of the reason for no hot options, however, one could argue that if the meals are kept out, no ovens are needed either.
