A couple questions:
1. Are you planning to rent a car, hire a driver or take the train? I imagine you might find it more difficult to get a driver to take you to the Atlas Mountains, for example.
2. Are you planning to stay in European/American chain hotels, local hotels or riads? Again, I suspect the non-African chains will have restaurants that operate during the day, but thing might get tougher if you're staying in a Moroccan-owned establishment.
I do plan on renting a car, I am just trying to find a reasonable rate on an automatic, or I will need to learn stick! I have a friend that can teach me I just don't know anyone who owns one!

I would idealy look at hotels under the SPG chain. In Marrakech there is a La Meridien and I need to look at Fez. I am going with a baby so having my own wheels would probably make things a lot easier I would imagine.
