I have not been to Morocco during Ramadan, but this article offers some insights into what you can expect.

A couple questions:
1. Are you planning to rent a car, hire a driver or take the train? I imagine you might find it more difficult to get a driver to take you to the Atlas Mountains, for example.
2. Are you planning to stay in European/American chain hotels, local hotels or riads? Again, I suspect the non-African chains will have restaurants that operate during the day, but thing might get tougher if you're staying in a Moroccan-owned establishment.
