Once she got one the other 9 times they came and said. "We see you have requested a gluten-free meal, sorry we didn't have any loaded."
Not the crews fault and they try their best to get her whatever she can eat, but it makes you wonder what the point of requesting it in the first place is. The crew know it has been requested so why have they not been loaded on?

I am curious about this... You say that you request it at OLCI, which would, by default, mean that you are requesting it less than 24 hours before the flight.
Anything less than 24 hours and we do not guarantee the meal will be loaded. Do you mean that you request it through MMB (manage My Booking) before the 24 hour pre-flight period? Or you actually request it when OLCI opens?
If you request it after the 24 hour period, you are indeed correct. It will be noted as a Special Meal Request, but also annotated with an "*", which denotes to us that it was a "Late Request" of less than 24 hours before departure.
This is not a criticism of you, I am just curious as to how you are doing this to have a 90% failure in loading.
