I can say for LAX (and the other major airport locations that I've visited), it really doesn't matter. You choose the car you want and drive out...Round trip or one way it's usually yours.
I'm not sure how SFO-SLC would work, I'd be a bit caution because SLC is a contract station, but I don't know how that would effect you.
