It depends on the client, but if you are using the native vpn client in mac os/x, there's advanced settings you can look at.
If you are using (and required to use) some pre-configured client like cisco anyconnect, it's unlikely you can tweak the settings, but you might be able to using that client.

This is the Juniper Networks Network Connect client - I didn't see any preference settings there, but I wonder if I can use the native VPN dialer to connect to the same network, and by doing this perhaps override the block on split tunneling.
