I do hope you complained to the GM at Taj Palace Delhi - he would be horrified by your experience there. You should have dined at Blue Ginger, which is splendid.

Surprisingly, now that there is no longer an Aman in Delhi, there are no GREAT hotels there. Even The Oberoi is a disappointment. I like Taj Palace because it is convenient for the airport and has some very good restaurants, but your service issues were totally unacceptable. Pity.
