As I understand it, as a US passport holder, I can enter Hong Kong on a free transit visa, then also get a free 72-hour transit visa at PVG as well (for having an onward flight). Is this true? Or will my total days in "China" stack (which would actually put me at ~74 hours, hence my wanting to confirm).

As a USA citizen, you don't need a visa for Hong Kong. This is different from your statement that you enter on a free transit visa. Similarly at PVG you can do transit without visa. Saying that you get a free 72 hour transit visa just confuses the issues, as transit visas must be applied for in advance and are not free.
