Now, I've read recent posts in this thread and am second guessing the switch to the FS. Opinions? Should we switch back to the FS, or am I overanalyzing this?

Also, my plan is to do a canal tour, the Anne Frank House, the purse museum (a friend told them about it), Van Gogh and Dutch Masters. Is there any other must-do that we should try to squeeze in?
I prefer the FS, as it has a much better location, and based on having walked back and forth to Central Station, I went past the Ren, and its location in my opinion appears to be slightly seedy.

Also, you might want to visit the Rijksmuseum, which just reopened after a lengthy renovation. It is an easy walk from the FS.
