SAN-DFW-ANC-DFW-LAX-IAD with five segments probably wouldn't work, and honestly LAX-IAD is the segment I really want to get a guaranteed upgrade for.

Are you talking about an award ticket? If so, the answer is no - no sticker or mileage upgrades are possible. You could pony up the extra miles for the difference between Y and F award tickets.
