You mentioned you were late departing, without knowing the circumstances, it's possible the food could have been loaded & heated long before the flight departed (helpful c.c. peeps will doubtless be able to confirm if this is possible).

Had the Heston recommendation of turning the ovens down to low after the food not been done then this could result in ruined food and explain why others have said this dish is tasty.

We don't expect much from airline food but 'edible' should be achievable.
