Certain beef or veal dishes do seem to dry out in F and CW. I've had an truly appalling "steak" in F before now.
One thing I cannot understand is how BA can dream of serving risotto as an accompaniment. It is not - it is meant to be eaten on its own as a course in its own right. The Italians would have it as a primo. God knows where this idea that it makes an accompaniment comes from.
