This 90 day reg. hasn't been in force for over 2 years. You can get your visa at any time.
The visa now starts on day of issue (i.e. if a 10 year visa, the 10 years starts fromt he date the visa is issued).

They never check this info, so yeah, just put the address of the hotel and indicate that you will be there for the entire length of the trip.
If they don't check what you write initially, they sure aren't checking any changes of plans.
