I spoke to the person within Flying Blue, who liaises between Amex and FB. He told me that as long as the co-card holder makes at least one segment in the year and you cancel the FB Platinum Amex, the co-cardholder will only drop down one level each time.

This is due to soft-landing rules also being applicable in these situations.
