The new look has been out for a while now - apparently they finally made people switch.

All replies are still quoted. It just doesn't show by default, but it's there. To see the trimmed content, click the three small dots at the bottom of the reply text input field.

All the former options are still there, too - click the underlined A by the Send button for formatting options, or hover your mouse over the paper clip or plus signs for more insertion options - links, pictures, etc.
