In such cases, usually pax in the last few rows and/or pax flying using miles are the last ones to get served, so they don't get to choose whatever they originally wanted or miss out on certain things.
It has happened to me a couple of times, and while it bugged me, I didn't think it was a big deal...it's just one meal.
In your wife's case, since she was flying using miles, I don't think she can get any sort of compensation for this.

Happened from time to time on what airline may I ask ? Even with UA having such a mediocre service, it may run out of choice but not out of appetizer, soup and dessert all together. Running out of choice because the pax sitting at the last row is understandable, but having no food to serve is unacceptable, I think you are confused with the two.
There should be no difference in regarding to service with one is paying and one using miles, very few airline will differentiate the service just base on that reason, and OZ certainly is NOT one of them (how do I know ? because I actually ask the FA about what am I listed as in the manifest !)
The only thing it would differentiate the service is if a person is deadhead/relief pilots, FA, NRSA, employee pass.
