Why should the OP and his family have to worry whether or not their trip is "Japanese" enough? If they are doing what they enjoy doing, shouldn't that be enough?
Having been to the American and Japanese Disney parks, I preferred the experience in the Japanese Disney parks by far. DisneySea especially is an experience that is not duplicated anywhere in the world, and is a must-see for anyone who is at all interested in Disney parks.
