I have to say the problem lies with overcooking. If the "galley hag" would follow the cooking directions, the food would be better. Filets should always have some pink. But in all fairness, airplane ovens can be very difficult. You would think all food would come out the same. I have pulled out the same meals, same position, one rack down, and the two meals cook differently. It's as big a mystery as the sock monster.
