You can transfer miles, though there are two very important considerations:
1. It is not free. There is a hefty fee to transfer miles from one account to other. In many cases, instead of transferring miles, it is comparable / cheaper to just buy them.

2. There is an upper limit to how many miles you can transfer / gift (it is 60K / 50K).

It is much better for them to book the travel themselves and then use miles from your account (they can book the travel as they need and then you can give a call to AA to ticket the reservation using your account / miles).

Yes, absolutely. Please note, not all reservation options are available online. For certain routes / airline combination, you must call AA reservations.
