From the bedrooms, I would guess that one can leave the door open (or step out into the corridor) for some opposite side views without having to walk to another car. I haven't done such a trip yet, though.
Yup, cars go in any way that the switching crew sees as appropriate. I've seen Coast Starlights with one sleeper having the Bedrooms facing the ocean and the very next facing the inland.
The only thing you can count on is that you cannot guess which side you'll be on no matter what room you pick.
