I think Mainz is much better for a short visit than Frankfurt. Mainz has a lot of the charm of a small German city. It's easily walkable and has a number of sightseeing possibilities. I find Frankfurt large and impersonal. Of course, there are some nice areas in Frankfurt, but Mainz simply gives me a better feeling!
It is really very convenient to the airport, as well.
