I can't speak to Paris specifically, but in the Netherlands, Belgium, Germany and Denmark, soy milk is very wildly available, even in very small towns. I would guess in France it is also likely to be available. However, I don't recall seeing almond milk at all.

It used to be possible to travel with liquids - in 2002 I flew SFO - AMS with 2 frozen half gallons of lactose free milk in my carry-on for my kid - but these days I would not even think of trying it. Can you use powdered soy milk?
