The best Chinese dish that I had in China was (and still is) mashed eggplant with chili peppers (lei lajiao qiezi- 擂辣椒茄子). There's a good chance it is from Hunan (a province which I have yet to visit yet based on its delicacies I find it to play home to my favorite regional Chinese cuisine), so if you see 湘菜 (xiangcai) on a restaurant sign, and like spicy food, go for it.
