They will insist on using the US passport if you are applying in the USA. If you want the visa on the Polish passport, you'll either have to go back to Poland or int'l courier your application and that passport to a friend or agent in Poland, who can get the docs over to the Embassy in Warsaw or Consulate in Gdansk, pick up when finished, and courier back to you.
