A couple of relatively new and interesting restaurants that may opened since your departure are Cantinetta Luca and 400 Degrees, both in Carmel. The first is a delicious Italian restaurant and the second is gourmet burgers (meat and other). A fancier new place I can't afford is 1833 in Monterey where Stokes used to be. It's by the group that runs the Pebble Beach Food and Wine.
