I love mid November to mid December (long days) and mid February / March is nice too, starting autumn. But weather especially on the South Island is unpredictable. I remember a 7 hours hike at Christmas in freezing rain.

Otahuna Lodge (near Christchurch) is utterly charming ... and Blanket Bay (near Queenstown) has a gorgeous setting.
Blanket Bay was the best option before Matakauri. The manager is a lovely, but very special person who being member of the board of SLH talked the owner into never becoming Relais & Châteaux , well the Robertson's family Matakauri took the place - much nearer to Queenstown, but further from the hikes.
