I'm expecting everything to be fine, but just wondering how that would all work, especially if I check luggage onto my Croatia airlines flight.
Concerning how to find the flights: yes, ITA shows them, but you've to force a connection via ZRH resp. FRA. They don't show up when searching without this.

Concerning rebooking: if you're on one ticket, go to Frankfurt and then figure things out from there by talking to DL. They've some representatives there, or just call DL (I'd do it from FRA because your options from there are better than from ZAG).

By the way, with the changes made by AF in CDG, with all flights going from 2E, 2F, and 2G, CDG has significantly improved, so I would not avoid it in the future...
