I phoned the help line and they said there wasn't anyway of getting round this. However, I'd obviously like to get this spend on the card for the Avios and the companion voucher.

Surprised Amex are not being more helpful. It'd be worth a call to find out what you need to do to get your credit limit raised.
You may need to reduce credit elsewhere. Years ago MBNA had steadily raised my credit limit (around £20k iirc) which I thought was great. Until I was declined for another card for having "too much available credit"...
Alternatively can you split the flights (or pax) into two transactions making a payment in between?
