Yes, Pesos will be perfectly acceptable.

Even if your hotel quotes you a rate in Dollars, when you check out and pay they must convert the Dollar rate at the official exchange rate and present you with a bill in Pesos, which you can of course settle in cash (Pesos). Same goes for airline tickets.
